Zucchini Bread

Just because it’s breakfast doesn’t mean you can’t have vegetables! I seriously hide veggies in everything these days. Usually it’s spinach and I pretty much put it in everything- waffles, nom noms, pancakes, chicken meatballs, omelettes, smoothies … etc. (Is spinach even a vegetable?? Ha I don’t know!)

Now this recipe is the perfect way to incorporate a vegetable without having to just shovel spinach into everything and it has zero sugar so it’s perfect for your Little’s as well!

Ingredients:

  • 2 Bananas
  • 1 Zucchini
  • 4 Eggs
  • 1.5 T Olive Oil
  • 2 T Greek Yogurt
  • 1/2 c. Coconut Flour
  • 1/2 t Vanilla
  • 1 T Cinnamon
  • 1/2 t Nutmeg
  • 3/4 t Baking Soda
  • 1/2 t Salt

Directions:

  1. Grate zucchini and squeeze out excess water – set aside
  2. Mash bananas in bowl
  3. Mix in all ingredients and then fold in grated zucchini last
  4. Scoop mixture into either a muffin or bread pan
  5. Bake at 350 degrees for 25 minutes (for muffins) or 45 minutes (for bread pan)

I pretty much switch off between doing muffins or bread, both turn out great so it really just depends what mood I’m in! Sometimes when I make the bread, I’ll also throw in a handful or so of chopped walnuts so give that a try and let me know what you think!
