3 Ingredient Egg Muffins

I’m not sure if these even count as a recipe because I literally put any veggie scraps I have on hand in them ha but we’re going to count it!

Some of my favorite combinations are:

  • Spinach and tomato
  • Broccoli and cheese
  • Mushrooms and onions
  • Peppers and onions

So pick any of those two OR just use any scrap veggies you have lying around!

  1. Preheat oven to 350
  2. Grease muffin tray
  3. Place chopped veggies in individual cups
  4. Scramble 8 eggs and pore into tray cups
  5. Bake for 20 minutes

Eggs are one of the things Waylen will always eat. We make omelettes more than I’d like to admit but these are a great alternative that can be made ahead and even frozen when meal prepping!
