Cover anything in cheese and your Littles will probably eat it ha! Now the base is just three ingredient but you can add any extra herbs or spices to pump up the flavor. Here’s what you’ll need.
Ingredients:
- 2 cups Cauliflower
- 1 cup Shredded cheese
- 1 egg
Directions:
- Preheat oven to 375 and grease muffin pan
- Blanch cauliflower in the stove for 5 minutes then drain well
- Pulse cauliflower in a food processor or blender until it resembles rice
- Squeeze excess water out with a paper towel
- Combine egg, cheese, and cauliflower in a bowl
- Spoon mixture into greased pan
- Bake 12-15 minutes
