Easy Summer Pasta with Madison

I don’t know where you guys live but where I am it’s been about a million degrees for weeks. Okay so obviously that’s an exaggeration but it’s been hot. Even when it’s raining- it’s still been so HOT! That’s why I decided to team up with my favorite blogger babe from For The Kale of It to bring you this super easy summer pasta dish! It’s light and refreshing plus because it’s so quick to whip up it’s perfect for any busy family!

Now when I say this pasta is easy, I mean it! We literally decided on the dish while we were shopping at Whole Foods and of course they didn’t even end up having what we originally wanted but guess what? It still worked out!

Here’s what you’ll need:

  • Lemon
  • Banza Pasta (or any pasta!)
  • 1 Can of Peas
  • Parmesan
  • 8 oz. Pancetta, diced
  • Olive Oil

Directions

  • Cook pasta according to box instructions
  • While pasta is cooking, crisp up the pancetta in a skillet on medium heat. Then place on paper towel to absorb excess grease.
  • Zest and juice Lemon.
  • Toss strained Pasta in Lemon juice and zest, mix in strained Peas and Pancetta, then shave Parmesan on top (we did about 1/4 cup)
  • Drizzle with Olive Oil

But it’s seriously the perfect place to shop when you’re just looking for a little of something or even if you’re putting together a cheese board and don’t want to shell out the big bucks!
